Mason jar recipes are pretty popular these days, but not everyone wants to eat salads 7 days per week. Like any fitness enthusiast, I am all about the meal prep but I also love variety. One thing that bugs me about most meal prep plans is the amount of food that’s wasted. If I’m only using spinach in one recipe, its a waste to buy a bag that I’ll end up tossing out! That’s why this list is full of tasty, cheap recipes that use some of the same ingredients (but still taste vastly different from one another). Cheap and easy are two of my favorite words when it comes to cooking, and I’m sure you feel the same!

Chicken Florentine Omelet

Cucumber Tomato Snack Jar
Chicken + Pepper Quesadilla
Chicken Stir Fry
Ingredients for 5 Mason Jar Recipes
- Spinach
- Tomatoes
- Grilled chicken (I used frozen, but freshly cooked is good too)
- Cucumbers
- Chickpeas (canned)
- Nuts (I used almonds)
- Cheese
- Peppers (green, red, or both)
Ingredients You Probably Already Have
- Olive oil
- Basic vinaigrette
- olive oil
- vinegar (balsamic, apple cider, or red wine)
- italian seasoning
- salt + pepper
- greek yogurt (optional)
- Tortillas
- Soy sauce
- Eggs
- Cooked rice (optional)
For these recipes, the ingredients in Italics should NOT be put in the mason jars for your meal prep. These ingredients are used in the cooking of your delicious recipes!
Chicken Florentine Omelet
Ingredients
Tomatoes
Green Peppers
Spinach
Chicken
Cheese
2 Eggs
Directions
- Heat some olive oil in a non-stick pan.
- Sauté all veggies and chicken from mason jar
- When veggies are tender, add in eggs.
- Pour cheese on one side of egg mixture.
- When eggs are cooked thoroughly, flip one half of omelet over the other.
- Remove from pan and enjoy!
Veggies n’ Nuts
Ingredients
Basic Vinaigrette (recipe above)
Tomatoes
Cucumber
Chickpeas
Nuts (I used almonds)
Directions
This recipe doesn’t have to be cooked! You just throw everything in a jar and enjoy it when you’re ready!
Cucumber Tomato Snack Jar
Ingredients
Balsamic Vinaigrette (recipe above)
Cucumbers
Tomatoes
Directions
Cut your cucumbers into fourths then prepare your jar as pictured above. The balsamic vinaigrette is a tasty dipping sauce to compliment these hydrating veggies!
Chicken + Pepper Quesadilla
Ingredients
Chicken
Cheese (I use the Kroger brand fiesta cheese for extra flavor)
Green peppers
tortillas
Directions
- Heat your pan on medium high.
- When it’s hot, put your tortilla down and then put the contents of the jar on top.
- Slap another quesadilla on top of that!
- After the cheese starts to melt, flip the quesadilla. This part can be a little tricky but sometimes using a plate to flip it makes it easier.
- Cook it on that side for a minute or two then remove it from the heat.
- Cut it up and enjoy!
Chicken Stir Fry
Ingredients
Chicken
Peppers (green, red, or both)
Spinach
Tomatoes
2 tbsp of Soy Sauce
Rice (optional)
Directions
- Throw all of the ingredients in a pan and sautéed on medium high until spinach is wilted.
- If you’d like it with rice, put some in a bowl then top it with your ingredients! As an added bonus, you could throw some freshly chopped chives or green onions on top!

How long can you keep the jars in the fridge?

These are all great ideas! I only thought mason jars could be used for salads. I definitely want to try the Chicken Florentine Omelette, Quesadilla, and Stir Fry Recipe. All of the photos look amazing. In terms of prep, how many days is it ok to leave the food in the mason jars before cooking?
Ok I have another question for you! Are there any other meats aside from chicken that I can use in the mason jars? Also do you know of any places that have cheap mason jars? I’m thinking of buying a few in bulk.
