Recently, I was given the opportunity to head out to the Corner Bakery #UnFlat Event and sample some of their delicious new flatbreads! Chef Ric Scicchitano prepared a bunch of the new, flavorful Unflats for myself, and some other fab bloggers. He prepared everything from scratch, right there in front of us, so we could see for ourselves just how fresh Corner Bakery‘s ingredients were.
There were four Unflats he prepared for us:
The Southwest Chicken
The Caesar Chicken
The Caprese
The BBQ Pork
Each of these were delicious and under 330 calories! I was really excited when Chef Ric told us that you can order any of these with their original flatbread or with a multigrain flatbread (WINNING!). To my surprise, my favorite was The BBQ Pork (pictured above) flatbread sandwich! I’m not normally a huge fan of pulled pork, but combined with the house-pickled red onions and avocado ranch dressing, my taste buds didn’t stand a chance! There were so many mouth-watering flavors in this one sandwich that I found myself looking for more the next day!
The Caprese (pictured below), was another one of my favorites! At only 310 calories, it has bruschetta tomatoes, fresh mozzarella, arugula, and parmesan cheese! It’s the perfect option if you’re a vegetarian and pairs well with a caesar salad.
That brings me to The Caesar flatbread! This one has all-natural grilled chicken, romaine lettuce, bruschetta tomatoes, Parmesan cheese, and Caesar dressing all packed in with only 330 calories! It was REALLY good too! The caesar dressing they use paired with the bruschetta tomatoes will be like a party in your mouth!
The Southwest Chicken flatbread was full of flavor as well! Luckily for you, instead of just sharing the main ingredients, I get to give you the recipe they use to make the delicious sandwich!
Southwest Chicken Grilled Flat Flatbread Sandwich
1 each Flatbread (select your favorite)
1 oz. Slaw (shredded cabbage and carrots, diced green onions)
1-1/2 oz. Corn & Tomato Salsa
1 oz. Julienne Chicken Breast, warm
5-6 each Pickled Jalapenos
1/2 oz. Avocado Ranch Dressing
- Grill the flatbread on a flat top or panini grill
- Place slaw on half of the flatbread; drizzle with avocado ranch dressing
- Top with julienne chicken, corn salsa and pickled jalapenos
- Fold the flatbread over and close with a toothpick
How yummy does that sound? After all was said and done, Chef Ric sent us off with their new Lemon Blueberry Bundt Cake. When I tell you it was the best dessert I’ve had in a while, you shouldn’t take it lightly because I eat a LOT of desserts!
