The Perfect Fall Salad For Diner En Blanc

The event of the season, Diner en Blanc, is this Friday and I can not wait. If you’ve never heard of Diner en Blanc, its a super secretive picnic where everyone wears white and basically has the time of their lives. You can find out more about the all-white affair in my article from last year. As a self-proclaimed DEB veteran, I am most excited for the firework show and to see everyone’s outfits. Last year I was stunned by some of the ideas people came up with! I’ll be sure to snap more pictures of those outfits this year!

 

One of the things people love to do in preparation is packing a picnic to dine on at the event. While it is fun to unload your picnic box and set up your extravagant table decorations, it can be a little hard to come up with a menu for the event. You don’t want anything too casual, but you want to make sure its tasty enough to hold you over for the event! You want to make sure that whatever you pack is going to still be tasty at whatever temperature it is when you arrive at the event as well. Well my lovely readers shall stress no more! After my recent visit to Mimi’s Cafe, I’ve come up with the perfect dinner salad for your night! Bonus points for a meal that won’t leave you feeling bloated!

The warm potatoes make this salad all the better! I love the small bites being paired with the crisp green apples! Oh, and speaking of the tangy green apples. They are such a good contrast of flavor when paired with the sweet cranberries. This is love people. And if this recipe doesn’t put you in the mood for Fall, I don’t know what will!

Apple Nut Salad With Roasted Potatoes

Ingredients

  • Spring Mix
  • Feta Cheese
  • Walnuts or Pecans
  • Green Apples, sliced
  • Cranberries
  • Red Onions, sliced
  • Roasted Fingerling Potatoes, Cut Into 4ths
  • Balsamic Vinaigrette

Instructions

  1. Okay, this part is very difficult. Throw all of your ingredients into a bowl. Toss them together. Now eat!
  2. If you are taking these with you on a lovely picnic, I would recommend keeping the dressing and cheese separate until just before you eat them.
  3. If you'd like to add some protein, I recommend grilled shrimp.
  4. Some freshly group pepper would also compliment this dish rather nicely.
